Baked lemon garlic salmon is one of those dinner recipes that feels like a treat every single time you make it, while quietly being one of the most nutritious meals you can put on your table on a weeknight. Salmon is genuinely exceptional from a nutritional standpoint, rich in omega-3 fatty acids that studies consistently link to lower inflammation, better cardiovascular health, and improved brain function over time. It is also one of the best natural food sources of vitamin D, a nutrient that research suggests plays a far bigger role in how you feel every day than most people realize, from energy levels and mood to immune strength. The lemon-garlic marinade keeps preparation minimal and lets the fish’s natural richness shine without overpowering it. Modern nutrition science shows that omega-3 rich foods like salmon are among the most beneficial additions you can make to a heart-healthy diet.
INGREDIENTS:
- 2 salmon fillets (about 150g each)
- 4 cloves garlic (minced)
- 1 lemon (sliced + juice of half)
- 2 tbsp olive oil
- 2 tbsp fresh parsley or dill (chopped)
- Salt and black pepper to taste
- 1 tbsp capers (optional)
INSTRUCTIONS:
- Preheat the oven. Preheat oven to 200°C (400°F). Line a baking dish with parchment paper or lightly grease it.
- Season the salmon. Place salmon fillets in the baking dish. Drizzle with olive oil and lemon juice. Rub minced garlic evenly over each fillet. Season generously with salt and pepper.
- Add toppings. Lay lemon slices on top of each fillet. Scatter capers around if using. Sprinkle with fresh parsley or dill.
- Bake the salmon. Bake for 12–15 minutes, depending on thickness. Salmon is done when it flakes easily with a fork, and the center is just opaque. Don’t overbake — it dries out quickly!
- Serve and enjoy. Serve immediately with steamed vegetables, brown rice, or a fresh salad.
