INGREDIENTS:
- 3 ripe avocados
- Juice of 2 limes
- ¼ cup fresh cilantro (chopped)
- ¼ red onion (finely diced)
- 1 clove garlic (minced)
- ½ jalapeño (finely diced, optional)
- 1 tsp salt
- 1 cucumber (cut into sticks)
- 2 carrots (cut into sticks)
- 1 red bell pepper (cut into strips)
INSTRUCTIONS:
- Prep the avocados. Cut avocados in half, remove the pits, and scoop the flesh into a bowl.
- Mash to your texture. Mash with a fork — keep it chunky for more texture. Add lime juice immediately to prevent browning.
- Add the mix-ins. Fold in cilantro, red onion, garlic, and jalapeño if using. Season with salt. Taste and adjust — more lime for brightness, more salt for depth.
- Prepare veggie sticks. Cut cucumber, carrots, and bell pepper into sticks. Arrange neatly on a serving board or plate alongside a bowl of guacamole.
- Serve immediately. Serve right away for best freshness. If making ahead, press plastic wrap directly onto the guacamole surface, leaving no air, and refrigerate for the up to 24 hours.
