INGREDIENTS:
- 1 can chickpeas (drained and rinsed)
- 1 ripe avocado
- 2 whole wheat tortillas
- 1 tbsp lemon juice
- ½ tsp cumin
- Salt and black pepper to taste
- 1 cup fresh spinach
- 1 tomato (sliced)
- ¼ red onion (thinly sliced)
INSTRUCTIONS:
- Smash the chickpeas. In a bowl, mash chickpeas with a fork until about half are broken down — keep it chunky for texture. Add lemon juice, cumin, salt, and pepper. Mix well.
- Add the avocado. Cut the avocado in half, remove the pit, and scoop the flesh into the bowl. Mash it into the chickpea mixture. Taste and adjust seasoning.
- Warm the tortillas. Warm whole-wheat tortillas in a dry pan for 30 seconds per side, or microwave for 20 seconds.

- Wrap and serve. Fold in the sides and roll tightly. Slice in half diagonally and serve immediately.
