This creamy red lentil curry is the kind of one-pot meal that makes plant-based cooking feel effortless, deeply satisfying, and genuinely nourishing all at once. Red lentils are among the best plant-based sources of both protein and fiber you can cook with, delivering around 18 grams of protein and 16 grams of fiber per cooked cup, which is remarkable for a single pantry ingredient. That fiber feeds your gut microbiome in ways that modern nutrition science is increasingly recognizing as fundamental to your overall health, from your energy levels to your mood and immune function. The warming spices in this curry, including turmeric and cumin, bring their own layer of anti-inflammatory benefits alongside all that plant protein. Studies suggest that eating a variety of legumes regularly is one of the most impactful dietary habits you can build for long-term wellbeing. INGREDIENTS:
- 1½ cups red lentils (rinsed)
- 1 can full-fat coconut milk
- 1 can diced tomatoes
- 1 onion (diced)
- 4 cloves garlic (minced)
- 1 tsp fresh ginger (grated)
- 2 tsp curry powder
- 1 tsp cumin
- ½ tsp turmeric
- 2 cups vegetable broth
- 2 tbsp olive oil
- Salt to taste
INSTRUCTIONS:
- Sauté aromatics. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 5 minutes until softened. Add garlic and ginger and stir for 1 minute until fragrant.
- Add spices. Add curry powder, cumin, and turmeric to the pot. Stir constantly for 1 minute — this helps bloom the spices and deepen the flavor significantly.
- Add lentils and liquids. Add rinsed red lentils, diced tomatoes, coconut milk, and vegetable broth. Stir well to combine. Season with salt.
- Simmer until thick. Bring to a boil, then reduce the heat to low. Simmer uncovered for 20–25 minutes, stirring occasionally, until lentils are completely soft and curry has thickened.
- Serve and enjoy. Taste and adjust salt. Serve over brown rice, with warm naan, or on its own. Garnish with fresh cilantro and a squeeze of lemon.
