Crispy roasted chickpeas are the snack that makes you realize you never actually needed chips in the first place. One-half cup of chickpeas provides around 7 grams of protein and 6 grams of fiber, making them one of the most nutrient-dense snack options you can find in the grocery store. That fiber content feeds your gut bacteria through a process that nutrition researchers are increasingly calling one of the most important things you can do for your long-term health, and chickpeas are one of the easiest and most affordable ways to get more of it daily. Roasting transforms their texture from soft and dense to something wonderfully crunchy and satisfying, holding up well for snacking throughout the week. INGREDIENTS:
- 1 can chickpeas (drained, rinsed, and dried very well)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
INSTRUCTIONS:
- Dry the chickpeas. Spread chickpeas on a clean kitchen towel or paper towels. Pat them extremely dry — removing as much moisture as possible is THE secret to getting them crispy, not soggy.
- Season the chickpeas. Transfer dry chickpeas to a bowl. Add olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Toss until all chickpeas are evenly coated.
- Roast until crispy. Spread in a single layer on a baking sheet. Roast at 200°C (400°F) for 30–35 minutes, shaking the pan every 10 minutes, until golden and crispy throughout.
- Cool and snack. Let them cool on the pan for 5–10 minutes — they crisp up even more as they cool! Enjoy immediately or store in an open container at room temperature.
