This rainbow quinoa buddha bowl is the kind of plant-based lunch that looks stunning, keeps you genuinely full all afternoon, and comes together with simple, whole-food ingredients you can find in any grocery store. Quinoa is one of the very few plant foods that qualify as a complete protein, meaning it contains all nine essential amino acids your body needs for energy, muscle repair, and everyday function. INGREDIENTS:
- 1 cup quinoa (rinsed)
- 1 can chickpeas (drained and rinsed)
- 1 ripe avocado (sliced)
- 1 cup cherry tomatoes (halved)
- 1 cup baby spinach or mixed greens
- 1 cucumber (sliced)
- 2 tbsp tahini
- Juice of 1 lemon
- 1 clove garlic (minced)
- 2 tbsp olive oil
- Salt and pepper to taste
INSTRUCTIONS:
- Cook the quinoa. Rinse quinoa thoroughly. Add to a pot with 2 cups water, bring to a boil, then reduce heat and simmer for 15 minutes until fluffy. Fluff with a fork and set aside.
- Roast the chickpeas. Toss drained chickpeas with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast at 200°C (400°F) for 20 minutes until crispy.
- Make the tahini dressing. Whisk together tahini, lemon juice, minced garlic, remaining olive oil, and 2–3 tbsp water until smooth and creamy. Season with salt.
- Assemble the bowl. Divide quinoa between 2 bowls. Arrange spinach, cucumber, cherry tomatoes, avocado, and roasted chickpeas on top.
- Drizzle and serve. Drizzle tahini dressing generously over the top. Serve immediately or keep dressing on the side if meal prepping.
