Stuffed bell peppers with quinoa and turkey are one of those complete meals that look impressive on the table but are surprisingly straightforward to put together on a weeknight. Bell peppers are nutritional powerhouses in their own right, with a single red pepper containing more vitamin C than an orange, supporting your immune system, skin health, and your body’s ability to absorb iron from plant foods. Quinoa brings complete plant protein and fiber to the filling, while lean turkey keeps saturated fat low and protein high. INGREDIENTS:
- 4 large bell peppers (any color)
- 300g lean ground turkey
- 1 cup quinoa (cooked)
- 1 can diced tomatoes (drained)
- 1 onion (diced)
- 3 cloves garlic (minced)
- 1 tsp Italian seasoning
- Β½ cup shredded mozzarella
- 2 tbsp olive oil
- Salt and pepper to taste
INSTRUCTIONS:
- Preheat and prep peppers. Preheat oven to 190Β°C (375Β°F). Cut the tops off the bell peppers and remove the seeds and membranes. Place cut-side up in a baking dish.
- Cook the filling. Heat olive oil in a skillet over medium heat. Cook the onion for 3 minutes, then add the garlic. Add ground turkey and cook for 6β7 minutes, breaking it apart as it browns. Season with Italian seasoning, salt, and pepper.
- Mix in quinoa and tomatoes. Remove pan from heat. Stir in cooked quinoa and drained diced tomatoes. Taste and adjust seasoning β this is your filling!
- Stuff the peppers. Spoon the turkey-quinoa filling generously into each pepper, pressing it in firmly. Top each one with shredded mozzarella.
- Bake until golden. Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes, until cheese is melted and golden, and peppers are tender.
