Here is something that surprises most people. Your body actually has a specific receptor built for detecting heat and pain called TRPV1. Capsaicin does not create a chemical burn when it touches your tongue. It simply locks onto that receptor and tells your brain the temperature is dangerously high, even when it is not. The burn you feel is entirely a signal, not actual damage. Your brain is just being very dramatic about a chili pepper.
Science note: TRPV1 stands for Transient Receptor Potential Vanilloid 1. It normally responds to temperatures above 43 degrees Celsius. Capsaicin activates it at any temperature, which is why spicy food feels hot even when it is cold.

What exactly is capsaicin?
Capsaicin is the compound responsible for the heat in chili peppers. It belongs to a family of molecules called capsaicinoids, all produced by plants in the Capsicum genus. Interestingly, bell peppers belong to the same plant family but produce zero capsaicin, which is why they have no heat at all. Capsaicin is measured on the Scoville scale, a system developed in 1912 by pharmacist Wilbur Scoville. A jalapeño sits around 5,000 Scoville units while a habanero can hit 350,000. The compound is fat-soluble, which is why it clings to your mouth and why water does nothing to wash it away.
How does it boost metabolism?
Capsaicin activates a receptor in your body called TRPV1, which sits on nerve endings and normally responds to actual heat. When capsaicin binds to it, it triggers your sympathetic nervous system, which is the same system that kicks in during exercise or stress. This causes a small but measurable increase in body temperature, heart rate, and calorie burning. Researchers call this thermogenesis. Studies suggest that capsaicin may increase energy expenditure by a modest amount after a meal, and some research points to a shift toward fat oxidation, meaning your body may prefer burning fat for fuel when capsaicin is present.

Capsaicin activates TRPV1 receptors in the walls of blood vessels, which triggers the release of nitric oxide. Nitric oxide causes blood vessels to relax and widen, a process called vasodilation. Capsaicin and pain relief
This is one of the more counterintuitive things capsaicin does. When it contacts nerve endings, it causes those nerves to release Substance P, a chemical messenger that transmits pain signals to the brain. With repeated exposure, those nerve endings become temporarily depleted of Substance P and less able to send pain signals. This is the mechanism behind capsaicin-based pain relief creams used for arthritis, neuropathy, and muscle soreness. The burn you feel at first is the release happening. The relief comes after repeated use, once the nerve endings have quieted down.
